Impromptu Dinner


Started off the morning with this green green juice!!


 1    cucumber
 2    stalks of celery
 3    leaves of kale
 1    granny smith apple
 1/4 lemon
 1    inch of ginger




Y'all, this juice was GROSS!!! Phillip and I dreaded it! I think we had too much celery in it :-/ You know how celery has that stench? It was overpowering!!! I'll have to figure out a way to modify and make it better without defeating the purpose of the juice!

Absolutely gross!!! This one was hard to drink!! After work, my mom called and said she's swinging by to show me her new car. She got a BMW X3. It's absolutely beautiful! It's not too big, not too small. She looks so fancy in it :) I can't believe all the technology that can go into cars now. She has no excuse for anything in that car!

Phillip and I were in awe of how nice the car was! We could only say to each other "some day...." I know my dad worked super hard to get that so good for them!










On a completely unrelated note...LOOK AT THIS NASTY MOTH THAT WAS ON MY WINDOW AT WORK!!! ewwwwwwwww sooo gross!! I have never seem such a big 'ol nasty thing!






















So back to being the silly family that we are! Mom and dad came by to show us the car and we had an impromptu dinner. Mom brought over seafood salad. (shrimp and scallop) and Phillip & I made truffle salt salmon and a side of miso-grapefruit bacon brussel sprouts! It was so healthy and delicious! But the best thing is that we got to spend some quality time talking and enjoying a meal. With the wedding being around the corner we really forget/don't have time to be just a family without planning for something or meeting with a objective for the wedding.

Phillip and I can't wait to be married, but I think we are so ready to go back to our life together where we were not planning a wedding! It's the last mile stretch! So, I won't be blogging until probably Monday since I'll be gone with my so very special dear friends in San Antonio!!! I am SO FREAKING EXCITED!!! Hopefully I'll survive!!

I'm Just SO Hungry!

Good morning! So yesterday (9/23) We kick started our morning with a juice I could drink and actually enjoy!! We went ahead and made it the night before so we can sleep in!! I was FaceTiming with my soon-to-be-Mother-In-Law, Denise, and she was told by her holistic doctor that the nutrients of juicing escape after 24 hours :-/ So, if you're lazy like Phillip and I, not wanting to process juice every time you want to drink it, just make enough for 24 hours!

Ok so the drink we had for breakfast and snack calls for the following:

  1 cucumber
  2 leaves of kale
  2 apples
  3 cups of grapes
  1 inch of ginger


   (Remember that it seems like a lot more in the picture because we make servings of two, so everything is doubled!)




This time we had plentiful of juice!!! I think having grapes in the recipe can really change the amount of fluid. This was just so so yummy! We had it for breakfast, ate steak with my dad's teriyaki marinade and orzo pasta for lunch, and had like two mason glass full of this juice for dinner. Phillip and I lost to the battle of hunger, so we ended up eating the rest of our steak. (It was only like 4oz. of steak each).



So now for the stuff that no one wants to talk about. I'm hesitant to put this out there but currently I weigh 155 lbs. Eeek it's a cray number because I'm so used to being about 110 to max 120... Hopefully this juice cleanse/eating right will help me get to my goal!

Now other than eating healthy and juicing, I am so super excited about this weekend! My BACHLORETTE PARTY is this weekend!! (Why has the English language not accepted the word "bachlorette" yet? It keeps underlining that red squiggly telling me I spelled it wrong or the word does not exist!) My bunch of friends and I are going to have so much fun! SO much for a diet while I'm gone! But that's why it's important to keep up with goodness before and after :) I am so grateful for all the planning that has been done by my crew and I just can't wait until Thursday!

Other than the fun stuff, it's crazy how all these different things need to get done for a wedding! Phillip and I are constantly on the go! We need to make seating assignments, table numbers, finalize music, get with photographer, make programs, and literally think of anything that we've forgotten to do!

And the day goes on....

I'm BACK with a BANG!!

Ok, so I totally forgot I even had a blog!!! I figured it wouldn't hurt to try and attempt my comeback!!

Update on life since 2011...I quit teaching because I simply just got burnt out from school politics. I miss the kids all the time. I'm in commercial real estate now. I met this really amazing man, and now I'm getting married to him!! Eeeeek!!!

So here we are, 25 more days to go until our wedding... and we decided to start a juice cleanse!!




Phillip and I hit up Ranch 99 (an Asian grocery store where $20 can buy you a whole week's worth of veggies!) and bought cucumbers, kale, limes, lemon, apples, granny smith apples, beets and ginger. I love it when one stop to the grocery store gets you everything you need :) We had at home: carrots, celery and grapes so no need to purchase. All of this only cost $24.68!!! Gotta brag about a good deal!







We chopped up the veggies so they would fit in the juicer. Peeled off the skin for the beet and lemon/lime!

4 leaves kale                              1 beet
1 cucumber                             1/4 lemon
1 Granny Smith apple              1/4 lime
1 carrot (20 baby carrots)


 So all of this juiced turned out to fill up to the rim of my reusable Starbucks Venti cup!! I was afraid that the juice would be horrific, but it turns out it's really not that bad. I mean, if I want to get fit, I've got to make sacrifices right? Although, I do love veggies so if you don't like veggies, this "juicing" thing is probably not for you!






My "Hunya" (Instead of calling each other "Hunny" like everyone else, it's our silly way of referring to each other...hahaha) cleaning the juicer! Which is as easy as a quick rinse and maybe grabbing a sponge with soap to gently clean the juicer's components. If he doesn't mind cleaning it, I'm sure it's easy!!


So what is really cool about the left over stuff is that you can REJUICE!! We got like a whole 8 oz. glass full by processing it two more times!! Perfect for a snack juice pre made!!!

Now these balls of "pulp" can be used for something more!! I just love getting to use things for multiple purposes! No wasting my $24.68!!

HEALTHY DOGGIE TREATS!!! You take the pulp, put it in a bowl, add some oil (just enough to help the veggie balls cook) make them into balls, put on a cookie sheet, bake at 350 degrees. If your balls are pretty moist, 30 minutes. If they are dry, 15 minutes. When they are done cooking, let cool... then SERVE to your pups!!! They wouldn't eat the treats raw, but they went crazy for it once it was cooked! Phillip and I tried one, but it was soooo grosss!!! Definitely doggie treats :)

So we had this juice, the struggle was real towards 10:30 PM... I was really hungry and I was getting crabby! I was starting to get mean, but Phillip was so sweet in handling the hungry monster!! I lost the battle and had ONE COOKIE!! Yikes, but I'm sure that's really not going to affect the cleanse...? I guess we will see!!
